Strawberry & Spinach Salad Recipe

This salad is so simple and packs a ton of energy boosters into one delicious meal. Strawberries and spinach are perfect for lunch when you are craving something sweet, and need energy to get you through the rest of the workday.

Bonus: Spinach quickly fights inflammation in the brain that can cause depression and sadness!

Ingredients:

5 cups Fresh Baby Spinach

1 1/2 cups Strawberries, sliced

1/2 cup Crushed Walnuts

3 Tbsp Fresh Lemon Juice

1/4 cup Olive Oil

2 Tsp raw or local Honey

1 bunch Fresh Basil, finely chopped

Directions:

  1. In a large bowl, combine the spinach, strawberries, and walnuts.
  2. In a small bowl, whisk together the lemon juice, oil, honey, and basil. Pour over the salad and enjoy!
