No Shame Pizza Recipe!

Pizza was a staple in our house when I was a kid, and I’d be lying to say that I don’t love it! However, I noticed that the more I got into health, the more pizza became a shaming food for me. It was something that I would get extremely anxious about. Eventually, I found a healthy balance and started experimenting with fun and different types of pizza – this recipe is one of my favorites!

Ingredients

Olive oil or Coconut oil

1 small or 1/2 large Cauliflower

2 Organic Eggs

1 1/2 cups Mozzarella cheese or vegan cheese, divided

4 Tbsp Italian Seasoning

Pinch of sea salt and ground black pepper

1 – 12oz jar Pizza Sauce

Veggies of your choice

Directions

  1. Preheat the oven to 350 degrees. Lightly coat a baking seat with oil.
  2. Using a box grater or a food processor, grate the cauliflower.
  3. In a large bowl, combine the cauliflower, eggs, 1/2 cup of the cheese, Italian seasoning, and salt & pepper. Mix thoroughly.
  4. Spread the mixture evenly on the prepared baking sheet. Bake for about 30min.
  5. Remove from the oven. Spread on the pizza sauce, remaining cheese, and veggies. Bake for another 10-12min, or until the cheese is melted. Let cool for about 5min, then dig in!
