Ever experience a midday crash? The one that leaves you hangering for a candy bar or a soda from the vending machine? Homemade energy bars are a perfect solution. Eat them for breakfast for an energizing morning that will keep you sustained all day (plus they’re a great grab n’ go!). Or, have some on hand for a midday snack to keep you from crashing.
Ingredients:
1/2 cup raw cashews, chopped
1/2 cup raw almonds, chopped
1/2 cup raw peanuts, chopped
1/2 cup sunflower seeds, chopped
1/2 cup almond butter or peanut butter, melted
1/2 cup brown rice syrup or raw or local honey, melted
Directions:
- Line an 8-inch square pan with waxed paper.
- In a medium bowl, combine the cashews, almonds, peanuts, and sunflower seeds. Slowly add the nut butter and rice syrup or honey. Stir the mixture until it forms into one solid ball.
- Press into the prepared pan. Refrigerate for 60min, then cut into 12 squares. Wrap individual bars in plastic wrap or store in a covered container and refrigerate.
