Gluten-Free Apple & Cheddar Scones

Fall is absolutely my favorite season. As soon as the crisp air hits, I finally feel energized and like myself again. In celebration of fall beginning, I whipped up these Apple & Cheddar Scones for the occasion.

They are gluten-free, easy to make, and satisfy both a sweet and savory craving.

Enjoy!

Ingredients:

2 cups gluten-free flour
1 Tbsp. baking soda
¼ tsp. sea salt
2 granny smith apples
1 cup cheddar cheese, shredded or chopped
½ cup melted butter
3 Tbsp. applesauce
2 eggs
¼ cup yogurt
1 Tbsp. honey

Directions:

  1. Preheat oven to 425 degrees.
  2. Skin and chop one apple into small cubes. Place in the oven on a parchment lined baking sheet and bake 10-12 minutes or until soft.
  3. Thinly slice the other apple and cut into a cut into crescent slices.
  4. In large mixing bowl, mix together flour, baking soda, and salt. Add the pieces of butter in, working them in to form even crumbs. Add in ¾ cup of cheddar cheese and the baked apples and mix.
  5. Beat together 1 egg and 1 egg yolk. Set aside the egg white for later use.
  6. Add the applesauce, eggs, yogurt, and honey and mix in to the dry mixture until a dough ball is formed.
  7. On a parchment lined baking sheet. Lightly sprinkle flour onto the surface. Press the dough into a ½ inch round dough. Cut into 8 slices, just as you would a pizza.
  8. Place each of the scones about an inch or two away from one another on the baking sheet. Whisk the reserved egg white until foamy and brush on top of scones. Sprinkle with leftover cheddar cheese and top with a thin apple slice.
  9. Bake 10-12 minutes or until they’re golden brown on the bottom.
  10. Remove, cool, and serve!

Note: For a little sweet flair, you can also glaze with honey and egg white wash.
