Apple-Choy Slaw

A refreshing slaw salad for lunch! Bok Choy is packed full of anti-oxidants, is anti-inflammatory, and a great source of Vitamin C. Its semi-bitter flavor adds a nice bite when paired with the sweetness of apples.


5 stalks Bok Choy, chopped

1 granny smith apple, sliced

1/2 small red onion, thinly sliced

For the Dressing:

2 tbsp apple cider vinegar (or lemon juice)

2 tsp honey or brown rice syrup

1 tsp ground coriander

1 tsp dijon mustard

1/4 cup olive oil

Half of a lemon, juiced


  1. Combine Bok Choy, Apple, and Red Onion in a bowl.
  2. Prepare dressing ingredients in a separate bowl or jar with a lid and mix well.
  3. Pour dressing over salad ingredients, serve immediately, and enjoy!
